Mississippi Pancakes

A stack of fluffy Mississippi pancakes

Ingredients

  • 2 eggs
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 3 tablespoons butter, melted
  • 1 1/4 cup flour
  • 3 teaspoons baking powder
  • 3 teaspoons sugar
  • 1/2 teaspoon salt

Directions

  1. Heat nonstick griddle over medium heat.
  2. In a bowl, beat eggs until light and foamy. Add milk, oil, and melted butter.
  3. In another bowl, sift together flour, baking powder, sugar, and salt. Beat dry ingredients into the liquid ingredients with a wire whisk until smooth.
  4. When the griddle is hot, pour about 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface of the pancake and the edges start to look set, about 1-2 minutes. Flip and cook until golden brown on the other side.
  6. Serve hot with your favorite toppings.
